Emotional Servings

How does the way of serving food affect the taste?

Hypothesis

We believe that food tastes better when served well because the presentation enhances sensory anticipation (your eyes see the way the food is served, telling the brain it's going to be better then a non-well served cuisine), leading to exceptional enjoyment and appreciation of flavours.

Research

We could find no existing experiments done about our topic but this is the closest that we got. This is from Chef's Vision.

Food Presentation Affects Taste

Food presentation is known to affect the way something tastes. If your food is delivered to your table with a sauce that appears unappetizing, this could affect how you perceive the food's taste.

This is also the case in contrasting situations where the food looks like it was crafted by angels in heaven- if the food looks good, it may taste a little better to you.

According to Terry E. Acree, Ph.D., a speaker at the National Meeting of the American Chemical Society, people are able to "see" how food tastes before they even take a bite of it.

From Acree's words directly, we can infer that our eyes play a part in how foods ultimately taste to us. The way foods look can help us determine whether we like them or not, from a taste standpoint.

There is one more that we got from Scienc Direct  (https://www.sciencedirect.com/science/article/abs/pii/S0195666314001032).

Variables

Independant variable: The behavior of the server.

Dependant variable: Which serving is more appeasing.

Constant: Food, age group [25-40yrs of age], lighting, room, temperature, same 2 servers.

Experimental group: The server that acts ruder.

Control group: The server that acts normal.

Procedure

1: Find subjects.

2: Find appropiate time.

3: Find setting.

4: Get food.

5: Bring subjects into room and let him have a seat.

6: Experimental group comes in and serves subjects.

7: Control group comes in and serves subjects.

8: Then another person comes in and asks to rate both dishes.

Observations

Control group: They enjoyed the meal, and rated it well. They seemed to enjoy the sanitation, and good manners.

Experimental: They acted disgusted, and immediatly asked why he wasn't wearing gloves. They rated the meal poorly.

Analysis

The subjects seemed happy when we served them in a more friendly way.

They seemed a bit disgusted when we srved them in a poor way.

Conclusion

We conclude that the way someting is served does affect the taste of the dish.

Application

We think that servers in restaurants should train they're servers to be more friendly. This would affect the taste and so make the restaurant better.

Sources Of Error

We werent able to find 10 subjects.
