Hypothesis
If we create a healthier type of chocolate and taste test it with a normal chocolate bar and replace sugar with natural sweetness to make a new chocolate bar which is both healthier and more enjoyable.
Research
Origin:
- The chocolate comes from the cacao beans which grow on cacao trees. They usually grow in the rainforests of Central and South America.
- Advantages: Chocolate is good for your heart and blood flow. It also protects you from UV and keeps your skin glowing.
- Disadvantages: Especially milk and white chocolate include high sugar content and overeating these specific kinds of chocolate can contribute to tooth decay, obesity and in severe cases diabetes.
Types Of Chocolates:
- Dark Chocolate: Rich Intense flavour but also very bitter sometimes
- Milk Chocolate:Contains milk powder and condensed milk making it richer and sweeter than dark chocolate
- White Chocolate: Made mostly with cacao and sugar making it mostly the unhealthiest option
- Ruby Chocolate: A newer type of chocolate with a reddish-pink color with a berry-like flavour
Production:
- Because we mostly encounter chocolate in cakes and candies, it’s easy to forget that chocolate is a fresh product that comes from a tropical plant. Cocoa trees grow best with a lot of rain about four inches a month, so this decreases their production to tropical areas. Almost three quarters of the world’s chocolate is produced in West African countries of Ivory Coast, Ghana, Nigeria and Cameroon, and the rest coming from South America and Southeast Asia.
Sustainability:
- Chocolate and coffee both have a high environmental impact. They are both grown in tropical rainforests. Chocolate can be grown in the shade but it’s more productive in the full sun. The world’s top cocoa producer, the Ivory Coast has lost 80% of its forests in the last 50 years. Growing and processing chocolate also takes a lot of water, about 450 gallons to make a normal chocolate bar. Which means that soon chocolate will probably endangered due to human activity.
Pros & Cons Of Chocolate:
-
Cocoa contains both healthy and unhealthy forms of dietary fat, and contains minerals important for human health, including potassium, phosphorus, copper, iron, zinc and magnesium.
Cocoa also contains high levels of flavonoids, chemicals in plants that are known for their health benefits in humans. Dark chocolate contains especially high amounts of flavonoids, which may be why chocolate consumption has been associated with a decreased risk of heart disease in recent years, according to the 2013 review. Some studies have found that regular chocolate consumption is associated with lower blood pressure, decreased stress levels and increased alertness. However, other studies have found no effect on those parameters with increased chocolate consumption.
Variables
Controlled Variables: Different type of sugar substitute (Healthier Version or Stevia)
Independant Variables: Type of chocolate created (e.g., Ruby, Dubai, Dark, milk, etc.)
Dependant Variables: Taste accuracy and physical shape exams.
Procedure
Our procedure includes of how to make the chocolates and the ingredients.
INGREDIENTS PROCEDURE
Ingredients For Dark Chocolate 1. Pour the butter into the bowl and melt
¼ Cup Butter 2. Add 2 tablespoons of cocoa powder
2 Tbsp Cocoa Powder 3. Add 3 tablespoons of stevia and sieve together
3 Tbsp Stevia 4. Put into siicone chocolate mold after mixing well
5. Freeze for 1-2 hours and serve
Ingredients For White Chocolate 1. Pour the butter in the mould
¼ Cup Butter 2. Add 2 tablespoons of stevia and mix well
2 Tbsp Stevia 3. Add 2 tablespoons of powdered milk mix well
2 Tbsp Milk Powder 4. Put into silicone mould
5. Freeze for 1-2 hours and serve
Ingredients For Dubai Chocolate 1. Put white chocolate to give color
Kunafa 2. Add thin layer of chocolate
6 Tbsp Butter 3. Add Kunafa
Pistachio Cream 4. Add pistatio cream to the kunafa
Pistachio 5. Put another layer of chocolate
6. Freeze for 1-2 hours
Ingredients For Milk Chocolate 1. Melt the butter into the bowl
¼ Cup Butter 2. Add the 2 tablespoons of stevia and mix well
2 Tbsp Stevia 3. Add the cocoa powder then mix
1.5 Tbsp Cocoa Powder 4. Add the powdered milk and mix
½ Tbsp Milk Powder 5. Pour into the silicone mould
6. Freeze for 1-2 hours and serve
Observations
We observed that the pistachio cream worked better when we added less milk, and the thin chocolates were more secure and stable when we used the smaller mold. Additionally, we also had to ensure that we didn't add too much stevia sugar, as stevia is 400 times sweeter than regular sugar. Also when I researched another video and made it again it worked so much better.
Analysis
We used this data for the chart and we also realised that all the other healthy sugar subsituts have calories per teespoon but stevia has zero that's why we used and thats why its not on the chart.

Conclusion
To conclude, we would like to finalize that this project proves that chocolate can be both delicious and good for you. The goal was to create something people can enjoy without feeling guilty. This healthy chocolate is all about balancing flavor with nutrition, showing that you don’t have to choose between treating yourself and taking care of yourself.

Application
- Healthier Eating Option:
By removing added sugars and unhealthy fats in chocolate with natural ingredients, we help reduce the risk of health problems like obesity, diabetes, acne, and heart disease.
- Reduced Sugar:
This project can show us how reducing sugar and using natural sweeteners like stevia, or honey can still result in a tasty chocolate. This could encourage people to choose chocolate that has healthy sugars that come from plants, which have significant benefits for long-term health.
Sources Of Error
The problems we faced in this experiment is that we didn't calculate the sugar correctly and it turned to be more lumpier than smooth. Additionally, for the white chocolate, our first and second try, we couldn't concentrate the ingredients to mix well even if we attempted to blend them together. However we fixed those issues by using a different video that was more helpful. We also added too much stevia and since stevia is 400 times sweeter than regular sugar, we had to restart a few times to get the flavour right.
